    Observation: Observed two chemical spray bottles that were not labeled.
    Correction: OPERATOR CORRECTED AT TIME OF EVALUATION.
    Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
    Observation: The operator is using a sanitizer /disinfectant that is caustic and that may burn skin and states do not swallow- and is not marked on container that it is approved for food-use and is not being used in accordance with manufacturer's guidelines. It appears that this chemical may be intended for use in the hotel- this should not be stored in the kitchen and definately should NEVER be used on dishes/utensils.
    Correction: Immediately discontinue the use of this caustic chemical (do not use in the kitchen) Operator should use chlorine (bleach) to and check concentration with the chlorine tes-strips to properly sanitize equipment and utensils.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    OPERATOR CORRECTED AT TIME OF EVALUATION.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
