No food preparation (reheating) during today's inspection. Boxed lunches (from the permitted commissary) that included ham or turkey sandwiches, chips, applesauce and apple juice were served today. The PIC stated that boxed lunches will be served all week (Sep. 28-Oct. 1, 2015). Discussed the following with the person in charge (PIC): 1. No foods are prepared on site. All food is prepared at the Masonic Home (permitted commissary) and delivered to the facility cold. The PIC measures and records the temperatures of the foods upon delivery and documents them in a log book. The EHSS observed the log book for the month of September. 2. Upon delivery, the PIC places the food in the reach-in cooler and then reheats all hot foods in the oven prior to service. The PIC measures and records the reheating temperatures of the foods and documents them in the same log book. 3. The PIC stated that temperatures of the foods in the boxed lunches were not measured and recorded upon delivery today as these foods are not reheated prior to service. The EHSS strongly recommended that all foods be checked for temperature control upon delivery to ensure that it is being delivered at or below 41°F. 4. Ensure that the boxed lunches are immediately placed into the reach-in cooler upon delivery.

Recommend that each person that handles and/or serves the food sign a copy of the policy to be kept on file. Also recommend posting the policy in the kitchen where it is easily readable. Observed excellent reheating temperatures of foods and the overall facility very clean.

Reviewed Employee Health. Food in RIC actually observed < 41 degrees (milk overnight) so just replaced thermometer. Discussed menu: protein, veggies, dessert, rolls and milk. Logs reviewed for current month. Some foods still received > 41 degrees. Called Senior Connections and spoke with Jamie Smith. She is going to discuss with Masonic home and TNT. Food discarded at end of meal. Only item left over may be milk in individual cartons. No menu to review but typically have a protein, 2 vegetables, dessert, rolls and milk. Logs reviewed for last month. Food delivered by TNT and made by Masonic Home. Delivered between 9:15 - 10:15am Temperatures for cold PHF in cambros are 50-60 degrees upon receipt.
