Today a ROUTINE INSPECTION was conducted. Thank you for accompanying me during this inspection as your participation allows me to assess areas and processes at your facility that may require further clarification.
This Facility is in major part a grocery store and appears well run, manager is aware of Employee Health, Date Marking and cold and hot hold temperatures. On arrival I observed bleach sanitizer had been set up and cook is aware of how to test it and what is the correct concentration. Facility has an Employee restroom in the back for staff. No cooking was taking place during my inspection.

A RISK FACTOR inspection of your facility was conducted today. Thank you for accompanying me during this inspection.At this visit I was informed that the kitchen will not be in service till September when the cook returns.
Please identify food items purchased from supplier in Maryland and list ingredients with proper label.

    Observation: The following packaged food item(s) is not properly labeled as specified in Law: OBSERVED OLIVE SALAD, BEET SALAD AND PATE CONTAINERS AT THE FACILITY THAT WERE NOT LABELED WITH ITEM NAME OR INGREDIENTS
    Correction: Packaged food shall be labeled as specified in Law, including 21 CFR 101 Food Labeling, 9 CFR 317 Labeling, Marking Devices, and Containers, and 9 CFR 381 Subpart N Labeling and Containers, and as specified under 3-202.17 and 3-202.18. ITEMS ARE BEING PURCHASED FROM SILVER SPRING ,MD, INVOICE WAS PROVIDED. CFM HAS BEEN INSTRUCTED TO ENSURE ALL CONTAINERS BEING SOLD TO THE PUBLIC ARE IDENTIFIED AND LABELED CORRECTLY.

A ROUTINE INSPECTION of the facility was conducted today. Thank you for accompanying me during this inspection and answering my questions as this helps me to clarify processes where further assessments many be required for your facility.
NOTE: At this inspection EHS worked with staff and manager to discuss sanitizer concentrations and helped prepare a sanitizer solution of 100ppm of bleach when tested with bleach test strip. Also discussed Employee Health guidelines with manager who informed that she reviews the policy with staff at regular intervals.
THE MAIN DISPLAY CASE WAS EMPTY FOR SERVICING AND CLEANING PURPOSES AND HAD NO POTENTIALLY HAZARDOUS FOODS AT THE TIME OF INSPECTION. AMBIENT TEMPERATURE OF CASE WAS AT 38F.

  • Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site)
    Observation: The concentration of the chlorine sanitizer solution was measured at >200 ppm, the bleach test strip turned black. This concentration exceeds the approved limits for use with food-contact surfaces of equipment and utensils in a foodservice establishment.
    Correction: Maintain the concentration of chlorine solution at 50-100 ppm. Verify concentration using the appropriate test kit.EHS WORKED WITH STAFF AND MANAGER TO PREPARE A CHLORINE SANITIZER SOLUTION OF 100PPM WHEN TESTED WITH BLEACH TEST STRIP. DISCUSSED WITH MANAGER AND STAFF ON THE IMPORTANCE OF NOT EXCEEDING SANITIZER CONCENTRATIONS.

  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.

  • Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC (repeated violation)
    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department observed only one sgined Health Policy by a former employee and provided CFM additional handouts.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
  • Critical: Food Protection from Contamination / Package, Cover, Wrap (corrected on site) (repeated violation)
    Observation: Unwrapped or uncovered food in the following location where the food is subject to contamination: OBSERVED UNCOVERED TRAYS OF PEROSHKI IN THE WALK IN FREEZER
    Correction: Foods shall be protected from contamination by being stored in packages, covered containers or wrappings unless being cooled. CORRECTED: DISCUSSED WITH CFM ON COVERING THE ITEMS.
  • Sanitizer Test Kit Required (corrected on site)
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.OBSERVED FACILITY HAD QUAT TEST STRIPS BUT BLEACH AS SANITIZING SOLUTION.
    Correction: Obtain a BLEACH test kit. CORRECTED: HEALTH DEPARTMENT PROVIDED CERTIFIED MANAGER WITH A FEW BLEACH TEST STRIPS.
  • Physical Facilities Good Repair
    Observation: Observed that there are several ceiling tiles in front area that are stained and in need of replacement. Check to ensure there is no leak above the ceiling.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
