7 day shelf life is allowed on TCS foods held for more than 24 hours. The day you open or prepare is considered day one. Ranch dressing found with datemarks of 2/5-2/12 and 2/6-2/19. These are both incorrect. PIC corrected both dates. The date of the buttermilk used in recipe is not the expiration date you should be using. Please explain this to your staff.

Temperature tape turned easily on metal objects and "temp rite" test strip turned orange (good). Have difficulty getting "paper thermometer" thermolabel to turn on plastic trays - note that final rinse is specified for 15 seconds. Machine should give 180 degrees the full rinse time - may need to lengthen final rinse time or adjust booster - have maintenance check the machine.
