  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination. Observed raw chicken on top of raw beef.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Observation: Observed that boxes of lard, sugar, etc was not protected from environmental hazards because it was not in packages, covered containers, or wrapped.
    Correction: Prevent environmental contamination by storing food in packages, covered containers, or wrappings.

WIR has been serviced. Unit is now operating at 38 degrees F. All other items available. Permit issued.
No violation noted during this evaluation.		04/18/2014Follow-up
1) Have walk-in serviced. Needs to operate below 41 degrees F. 2) Food thermometer for taking food temperatures with a sensor at tip. 3) Gloves for food handling. 4) Test strips for chlorine sanitizer in 3 compartment sink. Call me when all is taken care of.
