Facility must be cleaned. Kitchen's floors, lower walls, equipment surfaces have accumulations of grime, debris, old food residues. Harborage conditions exist thoughout facility for pests. Extra small tables, chairs, other random equipment sitting in kitchen closing areas to coolers and handsinks. Met with owner regarding cleanliness of facility and how cleanliness affects employee hygiene and food safety. Do not use newspapers for storing food. The surface of newspaper is not approved for food contact and cannot be cleaned.
