  • Critical: Hands and Arms Cleaning Procedure* (corrected on site)
    Observation: Improper handwashing procedures observed.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Potenitially hazardous foods stored in ice cold holding at improper temperatures. Cut cooked chicken 44, cut cucumber 51, guacamole 50.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Cooling, Heating, and Holding Capacities
    Observation: Numerous foods observed cold holding in tub of ice..
    Correction: Provide additional refrigeration equipment necessary to maintain food items at 41 F or below (ice in an inadequate control).
