    Observation: Chef's knives stored between equipment at prep line.
    Correction: Store chef knives on a clean portion of the prep cooler, counter, table or cooking equipment. Clean and sanitize chef knives at least every 4 hours, or as needed.

    Observation: There is no data plate on the under-counter dishwasher.
    Correction: Provide a data plate or have the operating instructions readily available for the warewashing machine.

    Observation: Grease cup missing in exhaust hood.
    Correction: Install missing grease cup.

    Observation: Inadequate light at women's restroom sink. Measured 5-7 foot-candles.
    Correction: Provide a minimum of 20 foot-candles of light at the handsink.

    Observation: A wooden bowl is used to store lemon slices in the self-service area.
    Correction: Discontinue use of rough cut wooden bowl for this purpose. All food contact surfaces must be smooth, durable, and nonabsorbent, to prevent deterioration and to maintain an easily cleanable surface. Wood, if used, shall be hard maple or an equivalently hard, close-grained wood.

    Observation: Absence of no-smoking signs or international no-smoking signs in non-smoking area.
    Correction: Post of no-smoking signs or international no-smoking signs in dining area and/or at public entrances.
