Observation: In-use knives at cooking line improperly stored between use.
Correction: Store in-use knives on a clean portion of the food preparation table or cutting board only if the in-use utensil and the table top or cutting board are cleaned and sanitized every 4 hours.
- Wood, Use Limitation
Observation: A wooden bowl is used to store lemon slices in the self-service area.
Correction: Discontinue use of rough cut wooden bowl for this purpose. All food contact surfaces must be smooth, durable, and nonabsorbent, to prevent deterioration and to maintain an easily cleanable surface. Wood, if used, shall be hard maple or an equivalently hard, close-grained wood.
