    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Have unit serviced if not replacing unit. -- Foods discarded.

    Observation: The food-contact surfaces of the following equipment were not observed sanitized: plates, cups, bowls, etc. Dishwasher does not have any sanitizer in it.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Implement manual sanitizing procedures until unit is operating properly. Have unit serviced if necessary.

    Observation: Less than 20 foot candles of light was noted in the dishwash area. Light fixture broken.
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms. -- New light fixture has been ordered.
