    Correction: Obtain a QUATERNARY AMMONIA test kit.

MAINTENANCE:

*Dish Machine: Jackson JP 24 high heat sanitizer, thermolabel activated.

  • Critical: Date Marking of Refrigerated, Ready-to-Eat PHF (TCS Food) (corrected on site)
    Observation: The following refrigerated, ready-to-eat, potentially hazardous food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked: shredded monterey jack cheese, comm. proc. spagetti sauce both opened on Friday, August 23, 2013.
    Correction: Refrigerated, ready-to-eat, potentially hazardous commercially processed foods when opened and kept for more than 24 hours cannot have a shelf-life of more than 7 days, including the day of the original container was opened. These food items must be marked with either the "consume-by" date and/or "preparation" date, color-coded labels, or another marking system/method that effectively indicates shelf-life that is clearly understood and properly used by the employees. This date cannot exceed any manufacturer determined "use-by" date based on food safety. Training on date marking provided. Items dated during inspection.
  • Refuse / Area / Clean
    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.
    Correction: A storage area and enclosure for refuse, recyclables, and returnables shall be maintained free of unnecessary items and kept clean.
  • Critical: Controlling Pests / Methods to Use When Pests Are Found
    Observation: Effective methods are not being used to control pests. Observed one adult cockroach and one nymph under and on the heat sanitizing dishmachine in the kitchen.
    Correction: Insects and other pests are capable of transmitting disease to people by contaminating food and food-contact surfaces. If pests are found on the premises methods shall be used to control their presence. CONTACT A CERTIFIED PEST CONTROL OPERATOR FOR INSPECTION AND TREATMENT IMMEDIATELY AND FAX A COPY OF THE INVOICE FOR THE TREATMENT NEAR THE DISHMACHINE WITHIN 10 DAYS TO: ATTN: AREA E-4 INSPECTOR AT FAX # 703-385-9568
  • Cleaning Frequency for Physical Facilities
    Observation: The area under the dishmachine and also the floor drain of the three vat sink is in need of cleaning as a build up of grease and grime was observed during today's inspection of these areas.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

  • Critical: Package Integrity & No Dented Cans/ Specifications for Receiving (corrected on site)
    Observation: The following food item(s) from damaged packaging were found offered for sale or service: One dented can of mandarin oranges on a shelf along with non dented cans in the dry storeage area.
    Correction: Food packages such as canned goods shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Return all dented and damaged canned goods to your food supplier for a credit.
