    Observation: Drain line from walk in does not reach the floor drain.
    Correction: Realign drain pipe to reach the drain.

When using ice to keep foods cold, such as shredded cheese on the service line, be sure to have the ice level equal the food level. During the summer clean the ceiling vents in kitchen and dishroom. Clean floor drain by ice machine. Drain lines from ice machine spill water onto floor, realign the drain pipes. Do not thaw turkey on counter, thaw inside refrigerator.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing facility located at the dishroom and service line are blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the notebook and box of gloves preventing its use.

    Observation: Slices of deli meat found without date. Bottle of ranch dressing found with a 9/17 date which exceeds the 7 day shelf life.
    Correction: PIC placed correct date on meat and dressing. Remember the date you prepare ranch dressing is considered day one.

    Observation: Paper has been used to line drawers.
    Correction: Remove paper from these cleanable surfaces.

    Correction: Milk crates are not intended to be used as shelves. Provide proper shelving.

    Observation: Ice is being provided to teachers in a non draining container.
    Correction: Provide a container that drains the water away from the ice.

    Observation: Curtain to freezer walk in is broken.
    Correction: Repair.

    Observation: Can opener found dirty.
    Correction: Clean and sanitize.

    Observation: Due to improper operation of the mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1680) Machine is not sanitizing. It is stopping after wash cycle.
    Correction: Repair the unit so that achieving a utensil surface temperature of 160°F can be measured by an irreversible registering temperature indicator (e.g. thermolabel and maximum registering thermometer). Discontinue use of mechanical warewashing machine and convert to use of 3-vat sink wash, rinse and chemical sanitization. Use single-service items as deemed necessary if not capable of effective manual washing, rinsing, and sanitization of food-contact surfaces. Service tech was called. PIC went to disposable trays and is using the 3-c sink to clean and sanitize food equipment.
  • Refuse - Storage Areas, Rooms, and Receptacles, Capacity and Availability (corrected on site)
    Observation: There is no refuse container at the area immediately adjacent to the back hand sink.
    Correction: Provide a refuse container for the disposal of paper towels at the back hand sink.
