    Correction: Ice was placed on top of mahi in walk in. Was this prepped today? Ensure food is cooled prior to placing on make table. Ice was added to make table top. Person on line stated that unit was not turned on early enough today.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the kitchen by the cookline.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: fryer cabinets and wheels.
    Correction: Maintain nonfood-contact surfaces of equipment clean. More detailed cleaning is needed.
  • Critical: Equipment and Utensils - Before Use After Cleaning*
    Observation: The food-contact surfaces of the following equipment were not observed sanitized in the bar dishmachine. Only 10 ppm chlorine was available.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Do not use. Call for service. It appears that calibration is needed.

    Correction: I recommend you clean daily.

    Observation: Boneless and other wings found above 41 F in box.
    Correction: These were removed and placed in freezer to quick chill.

    Observation: The ready-to-eat (RTE) commercially processed desserts in the refrigeration unit were not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The bar warewashing machine is not equipped with a device to warn of low sanitizer level.

    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Wall beside kitchen handsink is not maintained in good repair. Holes in kitchen wall. Walk in pass thru door interior is no longer cleanable. Switch beside walk in and socket found in poor repair. Bare wood on wall. Ceiling vents missing above 3-c sink. Beer walk in threshold is in poor repair. Water pooling in several areas (by ice machine, under fryers, by prep sink).
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: The following found dirty: gasket to walk in door, walk in floor corners, floor drain at bar,, floor under 3-c, mildewed caulking by 3-c sink, wall beside kitchen handsink, floor drain in wait station, mildewed coving by handsink in kitchen, floor under fryers.
    Correction: Clean.

    Observation: Working containers of cleaner was not properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

Personal drinks to have lids and straws. Please review with workers about washing hands after eating and after bussing tables. Oyster tags are to have the last day of service marked onto tag prior to filing. Dishmachine was found sanitizing properly however it appears there is a lot of air in the tube. Monitor and have serviced if necessary. Bar dishmachine is still missing the alarm as was promised during last inspection. This to be corrected immediately. Remember 7 days of shelf life includes the day in which you open product or prepare.

    Correction: Discard the food at this time and ensure all previously frozen prepared or commercially processed RTE foods are served, sold or discarded by the most recent ""consume by"" date marked on the food container. Hooters Regional Manager will send me an email confirming repairs needed to correct violations cited under 3170 have been authorized. Dishmachine company has been asked to install alarm/low or no sanitizer indicator on bar dishmachine. PIC states that repairs will be completed as soon as possible with a target completion date of 09/30/2014.
Permit issued.

Walk-in cooler was serviced but is still operating at 44°F. TCS foods are in beer walk-in cooler <42°F. New condenser unit has been ordered and should be installed by 09/19/2014. (per email from Hooters Regional Manager 9/11/14) Please provide similar documentation that facility violations cited under 3170 have also been approved for repair and that the alarm/indicator for low/no sanitizer has been ordered for bar dishmachine.

    Observation: TCS food in walk-in cooler >41°F. Clam Chowder 43.9°F, Ham 44°F, and Turkey 44°F. Condenser unit is iced up.
    Correction: PIC relocated TCS foods to another cooler. Service tech arrived and states that unit will be repaired and capable of holding TCS foods <42°F today. A new condenser and gaskets have been ordered and will be installed as soon as they arrive.

09/10/2014Follow-up
Your permit to operate expires 09-11-2014. Before a new annual permit can be issued I need to have a plan of action to address the uncorrected violations cited on this report. You can email or fax me the plan of action or arrange another follow-up inspection to demonstrate compliance before 09-11-2014.
We discussed:
Servers with long hair that is not pulled back. At the time of this inspection no server was observed preparing food. Servers must not handle hair or allow hair to contact trays or food/drink wares. Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

  • Critical: Temperature, Cooking - Raw Animal Foods* (corrected on site)
    Observation: Burger ordered well done was 138°F when cook was ready to serve it.
    Correction: Burger was cooked to 161°F. Employee used food thermometer to verify cooking temperature.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: TCS food in walk-in cooler >41°F. Pork BBQ 44°F, Deli Turkey 44.5°F, Sliced tomatoes (8/26) 43.6°F. Condenser unit is iced up.
    Correction: PIC states that gasket for the unit have been on order for 3 months. TCS foods must be held <42°F. Until this unit is repaired and holds food at 41°F or less relocate the TCS foods. TCS foods were relocated to another walk-in that is <42°F. Repair this unit.
  • Warewashing Machines, Sanitizer Level Indicator (repeated violation)
    Observation: The bar dish machine is not equipped with a device to warn of low sanitizer level.
    Correction: Provide an audible or visual warning device/alarm to alert operator when more chemical sanitizer needs to be added.

    Observation: Walk in cooler condenser is iced up. Gaskets on this walk in cooler are worn.
    Correction: Replace gaskets and eliminate icing up of condenser.

    Observation: Drain under handsink by cook line has water standing in it. There is water on the floor around the drain. This drain appears to be capped off or clogged.
    Correction: Repair to eliminate standing water. Note: work has been done in this area - there is still standing water but didn't see any drain flies today.

    Observation: Drain line in kitchen near cook line hand sink has water standing in it. There is water on the floor around the drain. This drain appears to be clogged and contributing to the presence of the (drain?) flies.
    Correction: Repair drain line so drain flows to sanitary sewer.

    Observation: Paper towel dispense at servers station/pick-up window is jammed - paper towels not available.
    Correction: Provide paper towels at each hand sink.
