    Observation: Glasses at the bar were found stacked wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: The ready-to-eat commercially processed American Cheese in the freezer was not properly dated for disposition after opening.
    Correction: Mark a 24 hour ""consume by"" date once the food is thawed. Prior to freezing once opened, indicate the length of time the food was held refrigerated which is 7 days or less at 41°F. When the food is removed from the freezer indicate the date by which the food shall be consumed which is 7 days or less at 41°F minus the refrigeration time before the food was frozen.

    Observation: No disposable towels were provided a the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Pre-cooked sausage hot-holding at 103 F. Use time as temp control for sausage. Gave manager form to document procedures. Dates of expiration on tomatoes are inconsistent. Some containers have two dates within two days and establishment uses a five day time period. Manager could not verify if tomatoes had correct dates (some past expiration but looked freshly cut).

    Observation: Various cooking plates were observed in a state of disrepair and damaged. Tile on wall is broken.
    Correction: Repair the cooking paltes to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the cooking plates, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
