Critical: Cooling* (corrected on site) Observation: The egg mix was mixed at 1pm and measured at 2:30 at 48 degrees, then at 3:30 at 47.1 degrees, which showed it was not being cooled correctly. The sausage and cheese mix was mixed at 4am and read 53 at 2:30pm, which showed it was not being cooled properly.
Correction: The product was discared. Cool the egg mix and sausage and cheese prepared from pre-chilled ingredients to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
Cooling Methods (corrected on site) Observation: Food containers for cooling food were stacked and did not allow for maximum heat transfer. Also, the orange trays cannot be put under the pans used for cooling as that does not allow for maximun heat transfer as well.
Correction: Threw items away. Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Do not stack pans as the product is cooling, it will not allow for heat transfer.
