The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized. EHS observed that the CFM displayed good active managerial control of food receiving temperatures by placing salads recently received from assigned central kitchen (containing cooked chicken and shredded cheese mix) in the Walkin Freezer to rapidly cool. EHS called the central kitchen assigned to this school and spoke to the manager on duty to share that EHS observed chicken and cheese on salads above 41F. Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: shredded cheese=64-F
Correction: chocolate milk=51-F/49-F

Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Chest milk cooler located on the serving line near the CFM's office
Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly.
- Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
Observation: Outside refuse container was uncovered. The dumpsters were noted to be opened on arrival.
Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment. Keep the dumpsters closed tightly when not in use to prevent entry of birds and small animals creating unsanitary conditions.

Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: Ovens . The top and back surfaces of the ovens located under the hood were noted to be dusty.
Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues. The the surfaces of the oven more frequently. Also clean the back surfaces of these ovens.

Observation: Observed that the floor along the base of the wall behind the 3-vat sink, ice machine, and hood system is in need of cleaning.
Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food. Clean the floors thoroughly and more frequently to prevent debris accumulation.
