    Observation: Floors in kitchen in need of cleaning.
    Correction: Clean floors in kitchen and prep areas as needed.
  • Premises - Maintaining Premises - Unnecessary Items and Litter (repeated violation)
    Observation: Unnecessary items stored in kitchen area.
    Correction: Remove any items not needed for food prep and cleaning to facilitate cleaning. Keep areas organized.

    Observation: Ledge and edge of salad bar is not smooth & cleanable.
    Correction: Seal crevices and wood around salad bar to make it cleanable.

    Observation: Grids over light bulbs are not approved as sheilds.
    Correction: Sheild bulbs properly with tubes or replace grids with solid plastic cover.

    Observation: Door to restroom does not have self closure.
    Correction: Install closure or spring loaded hinges so that door closes by itself.

    Observation: Unnecessary items in kitchen.
    Correction: Do not keep any unnecessary items in the kitchen area. Remove all store all items not needed for the operation of the establishment.

Business is relocating to building with existing home standard kitchen. Operator to add hand washing sink and add a basin for 3 compartment sink. Can use existing bath tub for mop sink. Similar menu of sandwiches from previous location and has added salad bar. If catering will use commercially prepared heat & serve foods such as bbq, beans etc.

    Correction: Fill in cracks and crevices or refinish floor to be smooth and cleanable.
