    Observation: The person in charge failed to explain the correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.
  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor.;Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Equipment and Utensils - Multiuse, Characteristics
    Observation: The food contact surface of the storage shelving is not durable, nonabsorbent, easily cleanable, resistant to pitting.
    Correction: Paint the wooden shelves to permit easy cleaning and prevent the migration of deleterious substances, or transference of colors, odors, or tastes to food.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F.

It is important that staff are trained on safe food handling practices as it pertains to their jobs. An in-service training will be conducted as soon as it can be scheduled. Also discussed with personnel the importance of the employee health policy.

    Observation: Employees are not properly trained in food safety as it relates to their assigned duties.
    Correction: Train all employees in food safety as it relates to their assigned duties.

    Observation: Employees are not properly sanitizing cleaned multiuse equipment and utensils.
    Correction: Ensure employees are properly sanitizing cleaned equipment and utensils before they are reused, through routine monitoring of solution temperature and exposure time for hot water sanitizing, and chemical concentration, pH, temperature, and exposure time for chemical sanitizing.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a Chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

02/09/2015Routine
I spoke with the PIC about the need to provide some In-Service training to food handling employees. It was determined that the second or third week of December would be suitable for this training. We also discussed the Employee Health Policy as well as the correct way to properly cool foods.
  • Cooling Methods
    Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer.
    Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
  • Cooling Methods
    Observation: The methods used for cooling were not adequate.

    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
11/10/2014Routine
Discussed with food personnel about the importance of properly cooling potentially hazardous foods. Cooling temps are not being monitored and hot foods are being left to cool while stacked and covered, rather than cooled correctly. Cooking and reheating temps were also discussed with food personnel. Recommend that all food personnel attend a Servesafe food handlers class to be trained in safe food handling practices.

    Observation: Employees are not aware of or are not practicing proper methods to rapidly cool potentially hazardous food (PHF).
    Correction: Ensure employees are using proper methods to rapidly cool PHF that are not held hot or are not for consumption within 4 hours, through daily oversight of the employees' routine monitoring of food temperatures during cooling.
  • Person in Charge
    Observation: Employees are not aware of or are not monitoring the cook temperatures of potentially hazardous food.
    Correction: Ensure that employees are properly cooking potentially hazardous food to the minimum required temperature for the specified amount of time in accordance with the Regulation. Be particularly careful in cooking those foods known to cause severe foodborne illness and death, through daily oversight of the employees' routine monitoring of the cooking temperatures.

    Observation: Taco Meat and Macaroni Salad cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing facility located in the kitchen was blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the plastic storage bins preventing its use.
08/11/2014Routine
Discussed with the PIC the proper method of cooling potentially hazardous foods. We also discussed the proper methods of washing/rinsing/sanitizing utensils and pots.
  • Critical: Cooling* (corrected on site)
    Observation: Sausage Patties noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
  • Warewashing Equipment, Determining Chemical Sanitizer Concentration
    Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution is at the proper concentration.
    Correction: Use a chlorine chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
