Training conducted for manager and assistant manager. We discussed Norovirus. Handout dealt with contamination, prevention, and clean up. It appears there is an issue with the use of the ice machine. Ice is considered a food. Unit must be kept clean and sanitized. Unauthorized personnel cannot come into kitchen to use/dispense ice for themselves. Consider relocating if the unit is abused by unauthorized personnel.

No test kit available. Provide. Hole in wall by retractable hose in dishroom. Wall to be smooth and cleanable. Dusty dishroom vent. Clean. Can opener holder to be cleaned. Chicken patties found at 56 degrees in rolling rack. Ensure these will be cooked and served today. Slacking is allowed as long as product does not rise above 41 degrees. I recommend you keep inside walk-in. Some light shields are dusty. Clean.

    Observation: Two unlabeled spray bottles.
    Correction: Identify contents. PIC labeled one and discarded the other.

Note: nuggets on service line were 122 degrees. That is why a time control policy is necessary. 162 degrees wash/185 degrees rinse. 200 ppm at 3 compartment.

    Observation: Chicken salad found with a date of 1/14/13, black beans hand date of 1/14/13. These were to have been used by 1/20/13 or discarded.
    Correction: Both were discarded. Watch food dates and purge.
