Went over healthy food handler policy with PIC.
  • Critical: Hands - When to Wash*
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task. Wait staff and food handlers must wash hands when changing functions and before gloving up. Correct immediately.

    Observation: The food handlers are eating in areas where they may contaminate food, clean equipment, utensils or other items needing protection.
    Correction: Provide a designated area where employees may eat so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection. correct immediately.

    Observation: Food in contact with equipment or utensils that have not been cleaned or sanitized as required. Soiled gloves
    Correction: Use only cleaned and sanitized utensils or equipment during food preparation. Change gloves before handling equipment and utensils after working with raw foods and soiled plates.
  • Cooling Methods
    Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer.
    Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Salsa must be cooled using methods that allow for maximum surface area exposure. Change to approved methods immediately.

    Observation: Salsa for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time. Label salsa immediately.

Lighting improvement is under way. Keep the shields in place once bulbs are replaced. Cooling foods corrected. Dish machine is not in use. Hot water heater to be addressed this week. Contact Health Dept. Prior to installing new equipment. Hand wash stations are supplied. Reminder prep small amounts of Proteins at one time to keep temperatures low.
  • Equipment and Utensils, Air-Drying Required (corrected on site) (repeated violation)
    Observation: Glasses and pans were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth. Re-wash glasses and pans that have not air dried before stacking. Begin correction immediately.

Sliced tomatoes at 44 were just preped. Chicken at 54F was during prep. Work with smaller batches . Wrap ice wandes with food film in the freezer until used.
  • Critical: Cooling* (corrected on site) (repeated violation)
    Observation: Sauce noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Cool in thin layers use ice wand and ice bath agitation etc. Sauce discarded during inspection.
  • Warewashing - Mechanical Warewashing Equipment, Wash Solution Temperature (repeated violation)
    Observation: The wash temperature of the low temperature chemical sanitizing ware wash machine is not meeting the manufacturer's specifications. The minimum temperature is 120ºF and the actual temperature is 110-150 F.
    Correction: Discontinue the use of the low temperature chemical sanitizing ware wash machine until it is working properly. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils. Consult with Health Dept. before re-use of dish machine. The hot water requirements must be met to insure the dish wash machine operates properly. Begin correction immediately. All equipment and dishes and utensils must be re washed in 3 compartment prior to opening.

    Observation: @TABLEWARE@ were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Soap was not provided at the hand washing lavatory in the bar area.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the bar area.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • Lighting, Intensity
    Observation: Less than 20 foot candles of light was noted in the dish wash area and front of kitchen.
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms, dish washing area and front of kitchen. Correct in 45 days.

    Observation: Less than 50 foot candles of light was noted in the kitchen prep area.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. Kitchen prep area to be corrected. Repair in 45 days.

Info. provided to PIC and food handlers on Damaged Cans top-bottom and side seam damage. Cans discarded.

    Observation: Unlabeled food containers.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: Chicken noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. Chicken was not properly cooled over night to 41F within 6 hours. Chicken was discarded. Fresh chicken was cooked for today's service. Went over proper cooling with PIC and staff.

    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Remove clothes pins and wire cable and install a cleanable ticket holder. Correct in 30 days.

    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable. Repair broken and missing floor tiles away floor drain. Correct in 30 days.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Keep back door closed unless in use.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
