Reviewed HACCP Logs. Good monitoring and recording. Good notation when temperatures are not in correct range. Discussed assuring to mark the end time on foods to assure that the time and or temperature will not allow for the growth of bacteria. Discussed odors possibly coming from floor drains and a vent that has been added to the dry storage room. The odors from the floor drains, usually are caused by the drains drying out and gas being able to come out of the drain. If a floor drain has an odor, pouring water down(with or without bleach) may help stop the odor. The odor coming from the vent may impart a change in the food that is in the dry storage room.
