    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. Observed chlorine being used as sanitizer in the 3 compartment sink. PIC needs to obtain a chlorine test kit to ensure proper chlorine levels in the sanitizer sink of 50 to 100 ppm.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing sink in the outside employee restroom.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Observed heavy accumulations of grease and food debris around the hood system, wall around hood system, and flooring underneath cooking equipment. Per PIC, will have a professional cleaning company address these issues.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit. Observed raw ground beef on slotted shelf above shredded cheese.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site) (repeated violation)
    Observation: Observed housemade macaroni salad, potato salad, and cole slaw with prep dates of 11/2 and 11/4. Items must be discarded within 7 days after prep.
    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the "consume by" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

* Suggested that PIC take a Certified Food Safety Managers class at earliest convenience.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) open deli meats and hot dogs in the refrigeration unit is not labeled with a "consume by" date.
    Correction: Discard the food at this time. Ensure all prepared RTE food is mark with the name and ""consume by"" date on the container at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served, sold or discarded within 7 calendar days or within 4 calendar days if held at 45°F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in most of the cold holding units in facility.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or chicken breasts. Facility only has a special meat bimetallic thermometer. PIC will be getting a digital thermometer.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the grill/ fryer has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors and wall around and under the grill/fryer area noted in need of cleaning. Accumulations of food debris and grease.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

*Good job correcting the issues on the last inspection. Keep up the good work.
*VA will be updating to the new FDA Food Code in 2015. A food safety certified manager will be required to be onsite during all hours of operation. Contact the health department or private contractor for training and exam availability.

*Food safety training for staff is suggested to ensure all food service workers know proper food handling temperatures and procedures.
*Gave owner a sample Employee Health Policy. This needs to be implemented ASAP.
*If food items like lasagna are not going to be properly hot held, use documented time removed from hot holding and time that it must be discarded. Maximum of 4 hours allowed for holding hot items without temperature control.
*Need hanging thermometer in all refrigeration units

    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

    Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Observed sausage and shell eggs stored next to RTE foods.
    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
