Keep thermometer with mobile snack cart to ensure sandwiches maintain proper temperatures. Sandwiches need to rotated every 4 hours.
Everything looks great!

  • Utensils - In-Use - Between-Use Storage (corrected on site)
    Observation: Dispensing utensils improperly stored between uses. Dispensing cups for diced chicken and ice scoop stored with handles contacting foods.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine bleach test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Spoke with PIC who stated that maintenance had cleaned vents of refrigeration unit and will come back to make sure that the unit is working properly. In the meantime, only condiments are being stored in the refrigeration unit. A temperature log is also being kept. As soon as maintenance gives the go-ahead that the unit is working properly, food will be moved back into unit. Temp logs will be maintained for the foreseeable future.
No violation noted during this evaluation.
11/03/2014Routine
Dispose of corn dog found in Quibell refrigerator immediately (done). Move PHF's from Quibell unit into 2-door Manitowoc refrigerator in order to maintain proper cold holding temperatures. Have Quibell unit serviced to ensure its working condition. Begin to keep temperature logs for Quibell refrigerator in order to accurately determine its suitability for cold holding.
Wash/rinse/sanitize can opener.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Corn dog cold holding at improper temperatures. Corn dog was 43 degrees after one day of refrigeration inside of Quibell unit.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: can opener.
    Correction: Clean and sanitize these surfaces for food contact.
10/22/2014Risk Factor Assessment
Spoke with PIC about proper cooling procedures. Make sure foods being cooled go from 135 to 71 degrees within 2 hours and from 135 to 41 degrees in a total of 6 hours. Foods hot holding must be held at a temperature of 135 degrees or more. Foods cold holding must be held at a temperature of 41 degrees or less.
Facility was clean and well maintained.

  • Ice Used as Exterior Coolant - Prohibited as Ingredient
    Observation: Ice used as a medium for cooling the exterior surfaces of DRINK CANS is also for drink ice or used as food.
    Correction: Cease use of ice used as a cooling medium for food, drink, etc. Ice that has been in contact with unsanitized surfaces or raw animal foods may contain pathogens and other contaminants.
