  • Critical: Equipment - Food Contact Surfaces and Utensils (corrected on site)
    Observation: Temperature measuring devices stored in a cup of sanitzer between uses.
    Correction: Thermometers must be cleaned prior to sanitizing and then should be stored in a clean, protected location after allowing to properly air dry.

    Observation: Observed employee using single use gloves to handle dirty dishes and using the same gloves to handle cleaned and sanitized dishes.
    Correction: Once gloves are soiled remove them and wash hands prior to handling cleaned equipment and utensils.

Observed proper hand washing, glove use, thawing and cooling. Kitchen is very clean and well managed.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the handwashing sink by the 3-vat sink was measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens. Correct by 4/10/13.
