Today’s visit was to conduct a Risk Factor Assessment inspection.
CFM informed EHS that walkin freezer was not functioning properly (noticed air temperature reading was high and some items were no longer frozen) and contacted repair services. EHS observed ambient air temperature of the walkin freezer to be at 38F and took a potentially hazardous food temperature (american cheese 29F). EHS recommended to keep the walkin freezer closed as much as possible until it is repaired.
Please send an update on the walkin freezer by tomorrow (October 8th).

  • Critical: Package Integrity & No Dented Cans/ Specifications for Receiving (corrected on site)
    Observation: The following food item(s) from damaged packaging were found offered for sale or service: dented cans in dry storage
    Correction: Food packages such as canned goods shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Return all dented and damaged canned goods to your food supplier for a credit. CFM removed dented cans and placed them in dented can area
  • Critical: Quaternary Ammonium Compound Sanitizer Solution Concentration per Use Directions (corrected on site)
    Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the sanitizer bucket with a concentration of 0ppm total quaternary ammonium compound.
    Correction: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit. Food employee reset solution to 200ppm

    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris:Gaskets of the Beverage Air 3 door refrigerator, Beverage Air milk cooler - cafeteria
    Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
    Observation: Outside recycling dumpster lids were damaged and unable to close. - THE TRASH COMPANY HAS BEEN MADE AWARE AND IS SCHEDULED TO DELIVER NEW DUMPSTER
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.
