Work on organizing areas so that they can be cleaned and maintained clean. Operator stated that the facility will be expanding. Walkins and storage will be added out back and many items in kitchen will be moved to that area. This should take care of many items addressed during inspection. Operator to get me copy of plans to show additions and changes.
  • Food - Packaged and Unpackaged - Separation, Packaging, and Segregation
    Observation: Containers in reach ins observed not covered.
    Correction: Prevent contamination by storing food in packages, covered containers, or wrappings.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths stored around kitchen area.
    Correction: Store all wiping cloths in sanitizer when not in use (or in hamper if soiled and not used).
  • Warewashing Equipment, Cleaning Frequency
    Observation: Exterior top, doors and screened trap of dish machine in need of cleaning.
    Correction: Clean around dish machine (and grease trap) as needed.
  • Sink - Service Sink
    Observation: Utility sink by back door is being used for storage of cleaning products, mops, etc.
    Correction: Do not store items in sink, keep sink accessible for dumping mop water.
  • Hand Drying Provision (corrected on site)
    Observation: No papertowels at hand washing sink. Observed employee drying hands with cloth towel.
    Correction: Keep paper towels supplied at handsink.
  • Dressing Areas and Lockers - Designation (corrected on site)
    Observation: Flip flops stored on top of grease trap.
    Correction: Store all personal items in a designated area away from food prep.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors in storage area, around dish machine and grease trap appear in need of cleaning.
    Correction: Organize areas and store all items in designated area so that floors can be cleaned and easily maintained.
  • Pests - Controlling Pests*
    Observation: Flies observed in storage area.
    Correction: Use proper methods to control flies. Keep area around back door clean inside and out as not to attract flies. Use glue boards and other approved methods to eliminate flies from establishment. Operator stated he is planning on putting air curtain in at back door also.
