Person in charge knowledgeable about food safety and answered questions correctly regarding cold holding, sanitizing concentrations and employee health. Proper date marking of ready to eat foods. Very clean and organized kitchen. Employees were observed washing their hands when necessary. Keep up the great work!

Hand sinks well stocked with hot water, soap and paper towels. Staff knowledgeable of proper cook temperatures. Discussed with PIC that single use containers are not to be reused for food storage.

    Observation: Homemade tarter sauce observed being cold held beyond 7 days.
    Correction: Sauce that was date marked over 7 days was discarded. Homemade tarter sauce needs to be discarded after seven days.

    Observation: The small cutting board used for preparing/slicing tomatoes is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surfaces of the inside (shelves) & outside of the cupboards/shelves in the food preparation area and knife scabbard need cleaned.
    Correction: Clean these surface at a frequency necessary to preclude accumulation of soil residues.
