Shipment of product received during inspection and product stored in units. Observed oyster tags attached to product. Container of wiping cloth sanitizer registered at 200ppm. M3 Turbo air freezer (seafood) registered at -5 degree, walk-in cooler registered at 40 degrees, new Beverage air unit registered at 30 degrees, prep unit registered at 40 degrees and dishwasher-wash 140 degrees and rinse cycle registered at 150 degrees. Spoke with staff about issues to be addressed.

Observation: Upstairs freezer box door gasket torn.
Correction: Repair or replace the freezer box door gasket in accordance with the manufacturer's specifications.

Observation: Observed accumulations of ice buildup in Whirlpool fridge and water inside Beverage air prep unit underneath containers of product.
Correction: Clean and sanitize these surfaces for food contact.

Left copy of food manager class schedule and food handler class schedule with manager. Permit, receipt and copy of application issued.

Observation: The small freezer door was observed in a state of disrepair and damaged.
Correction: Repair the small freezer door to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the small freezer door, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: The door gaskets of the small freezer and chest freezer are damaged.
Correction: Repair or replace the door gaskets in accordance with the manufacturer's specifications.

Correction: Clean the surface at a frequency necessary to preclude accumulation of food debris that become encrusted.

Correction: Shield or replace light bulb with a coated or shatter-resistent bulb.

Observation: Spray bottles are not properly labeled.
Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
