This is a follow up inspection in response to a permit inspection conducted on 3/17/2016. Previous violations corrected. This follow up inspection was also conducted in conjunction to a follow up inspection for a complaint filed on 3/17/2016. Discussed the following with the Certified Food Manager (CFM): 1) Continue consistent date marking of all TCS (time temperature control for safety) foods that are held for more than 24 hours 2) Start keeping a sanitizer concentration log for the wiping cloth solution and the three compartment sink to ensure the concentration of chlorine is not below 50 ppm and not over 200 ppm. The log should reflect any corrective actions taken when the sanitizer concentration is out of range. 3) CFM to replace some lights in the food prep area to maintain a consistent lighting intensity of 50 foot candles 4) CFM in process of replacing back screen door, and re-aligning the lock for the main back door. 4) The CFM was able to provide a complete pest control report for the fruit flies. No fruit flies observed during this inspection. 5) Store all soft drinks in the front and in the walk in cooler at least six inches off the floor.

Discussed the following with the Certified Food Manager (CFM): 1) Ensure all handsinks are supplied with soap 2) Ensure all Time-Temperature Control for Safety (TCS) foods that are held for more than 24 hours are date marked with the prep date or the discard by date (ex. cooked pasta) 3) Provide pest control report during follow up on 3/31/2016 4) Pay permit fee and complete Health Department permit application. 5) Ensure marinara sauce is adequately reheated to 165 F prior to placing on steam table 6) Ensure pizza slices on hot plates are not touching miscellaneous surfaces such as printers, cables etc.
Health permit to be issued after permit fee and application are processed by the Health Department. Follow up scheduled for 3/31/2016.
