    Correction: Ensure potentially hazardous foods that are cooked, cooled, and reheated for hot holding are reheated so that all parts of the food reach 165°F or above for 15 seconds. Food shall be reheated within 2 hours. The apples were reheated due to being within the 2 hours and the green beans were disposed of at time of inspection. The hot table temperature was adjusted.

    Correction: Repair the unit to restore chemical sanitization. Verify the level of sanitizer and continually monitor by the use of test strips/kit. The owner adjusted sanitizer lines of the unit for proper operation.

    Observation: An air gap between the water supply outlet (pre-wash sprayer) and the flood rim level of the pan of dirty water is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap. The container of dirty water was relocated to provide separation.

    Observation: @PLUMBING@ in poor repair - leak at the women's toilet. Hot water is not turned on at all of the handwashing sinks.
    Correction: Repair and maintain all plumbing components and fixtures.

Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: Food is subject to environmental sources of contamination during preparation - no splashguard at the handsink and the toasters and prep area is beside the handsink..
    Correction: Protect unpackaged food from environmental sources of contamination during preparation.
  • Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent (repeated violation)
    Observation: The nonfood contact surface of the shelf under the ice storage unit is not nonabsorbent, and/or smooth.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
  • Ventilation Hood Systems, Adequacy (repeated violation)
    Observation: Grease/Condensation is noted to be accumulating on the walls/ceiling at the (unit). This appears to be due to insufficient ventilation of the hood system. Grease is on the ceiling and ventillation vent (part of the trim is melted) where food has been fried and the grease has deposited on ceiling (extra fryer on a mobile cart). Grease is also accumulated on the ceiling, wall, and side of the hood where the fryer is not completely under the exhaust hood system.
    Correction: Provide an additional hood system or upgrade the current system to adequately ventilate grease and condensation from the establishment.

    Observation: Mechanically vented hood filters not in good repair or have gaps in between filters. The extra door in the walk-in cooler that is not utilized has a gap to the outside that may be affecting the cold holding temperatures of the food.
