General Comments that relate to this Inspection Notes:-hot dogs and popcorn may be served to guests playing in the casino upon request.-hand sink stocked; shield has been extended to cover the length of the sink-reach in -- hot dogs at 40F; extra hot dogs are stored in restaurant freezer and thawed under refrigeration-discussed preparation and serve of hot dogs with no issues noted-per operator; hands are washed and gloves are used prior to handling hot dogs. Tongs are also used and are washed after each serving. Hot dogs are placed in steamer for approximately 1 hour prior to serving.-no hot dogs hot holding at time of inspection; ensure hot dogs are held at 135F or above.-stem thermometer available-dishwasher tested at 50ppm chlorine-test strips available-restrooms stocked and clean-regular pest control by Ecolab; no pest issues noted at time of inspection-dumpster area checked ok-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

General Comments that relate to this Inspection This facility serves hot dogs and popcorn and is located in the Alamo Casino Bar.Facility will be a risk category 2. CFPM requirement met.The following items shall be corrected before permit issuance:-handsink located nearest to hot dogs -- install liquid pump soap and paper towels. Install splash guard on left side of sink to prevent splashing onto clean glassware.-provide stem thermometer to monitor reheat and holding temperatures of hot dogs.Notes:-Facility not serving hot dogs at time of inspection. -popcorn machine clean - served by cocktail waitresses - no public self serve. discussed serving procedures with no issues noted.-cold holding checked ok-- hot dogs thawing under refrigeration at 28F; reach in ambient temp of 38F. -discussed handwashing procedures and no bare hand contact with ready to eat food.-discussed need to change out tongs every 4 hours to prevent bacterial growth. Establish time marking system to ensure they are changed at least every 4 hours.-discussed reheat and holding cook temperatures with CFPM with no issues noted.-food stored properly-chemicals labeled and properly stored-dishwasher in bar used - measured at 100ppm chlorine-sanitizer bucket available at 200ppm quat-discussed first in; first out procedures with no issues noted-regular pest control by Ecolab - no issues noted at time of inspection.-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop
