The purpose of this visit was to conduct a risk factor assessment in conjunction with food borne illness complaint investigation. See the report for complaint inspection on the same date for details. NOTE: - The PIC currently holds Maryland's valid CFM ID. Advised to obtain Virginia's CFM ID. - Place small portion of food items in the True 2-DR prep unit (Right) to maintain the temperature. Keep the covers closed so the heat from the cookline does not affect the prep top's temperature. - Keep the food containers lid prop open for let the hot air out. Cover the food completely after food cooled. - E-mail the parasite destruction letter for salmon on the provided e-mail/fax with in 48 hours.

This visit was conducted to do a Risk Factor inspection: The facility appears to be well run with a few minor issues. NOTES: discussed with manager Ensure that the hand washing sinks are used only for hand washing Ensure that there is a separate area to store all dishes to be cleaned Please correct water ponding issue at the ice machine.
