The purpose of today's visit is to conduct a routine inspection.
  • Clean Ice Bins, Beverage Dispenser Nozzles, Etc. per Manufacturer Specs.
    Observation: Surfaces of ice chutes interior on both soda fountain machines needs cleaning.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold.

The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized. EHS provided CFM with and discussed handout on cooling methods and an extra handwashing sign for front handsink.
  • Critical: PHF(TCS) Prepared from Ingredients at Room Temperature Cooled within 4 Hours (corrected on site)
    Observation: The following food item prepared from ambient air temperature ingredients is not being adequately cooled to 41°F or less within 4 hours:
    1) Tuna salad at 48-50F in Walkin Cooler prepared 5.5 hours prior,
    2) Tuna salad at 44F on left serve line prepared 5.5 hours prior.

    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be cooled within 4 hours from 41°F or less if prepared from ingredients at ambient air temperature (i.e. reconstituted foods and canned tuna). MOVED TO WALKIN FREEZER TO RAPIDLY CHILL. RECOMMENDED TO GM/CFM TO CONSIDER STORING THE TUNA PACKAGES IN THE WALKIN COOLER TO PRE-CHILL BEFORE PREPARTION OR TO PLACE PREPARED TUNA IN WALKIN FREEZER TO RAPIDLY CHILL.
  • Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site) (repeated violation)
    Observation: The following food item(s) were found hot holding at improper temperatures using a calibrated food temperature measuring device: ------Meatballs at 116-127F at steam table.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19. REHEATED TO ABOVE 165F
  • Temp Meas Devices for Cold & Hot Hold Equipment, Present (corrected on site) (repeated violation)
    Observation: There was no temperature measuring device located in the following cold holding equipment:------Duke 2DR cooler.
    Correction: Cold or hot holding equipment used for the storage of potentially hazardous foods (time/temperature control for safety food) shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display. EHS PROVIDED EXTRA UNIT THERMOMETER TO CFM.

    Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees. THERE WAS NO SIGN AT THE SINK NEAR THE 3-COMPARTMENT SINK.
    Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands. SIGN WAS RE-INSTALLED BY MANAGER.
05/06/2014Routine
The purpose of this visit was to conduct an inspection based on a complaint received by the Fairfax County Health Department. Complainant alleged that she had become ill after consuming her meal, which included, egg, cheese, tomato and spinach.
During today's visit, cold-holding temperatures of the egg, cheese, and tomatoes were found to be in compliance. Egg cooking temperature was measured at 170F. Employee health and foodborne illnesses were discussed during today's visit as well.

    Observation: The following food item was found hot holding at improper temperatures using a calibrated food temperature measuring device: meatballs at 108F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19. MEATBALLS WERE REHEATED TO 167F.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) (repeated violation)
    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: chicken at 49F, and sliced tomatoes at 47F in 2DR undercounter refrigerator.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. MOVED TO WALK-IN REFRIGERATOR.
  • Temp Meas Devices for Cold & Hot Hold Equipment, Present
    Observation: There was no temperature measuring device located in the following cold or hot holding equipment: 2DR undercounter refrigerator.
    Correction: Cold or hot holding equipment used for the storage of potentially hazardous foods (time/temperature control for safety food) shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display.
  • Equipment / Good Repair / Operation
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: 2DR undercounter refrigerator at 46F.
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly.
  • Floor Mats and Duckboards / Cleanable & Removable
    Observation: Cardboard was observed being used as mat in the floor of the walk-in freezer.
    Correction: Mats shall be designed to be removable and easily cleanable.
  • Handwashing Signage at Handwashing Facilities Required (corrected on site) (repeated violation)
    Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at any handwashing sinks used by food employees.

    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: bbq chicken 44F and marinated spices chicken 44F in duke 2dr prep cooler. cfm discarded due to items being kept overnight. Deli turkey 45F, deli ham 44F, provolone cheese 44F in sandwich prep line. CFM removed top portion of items and put back in walkin cooler due to items being out in the sandwich line for 2 hours.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.
  • Temp Meas Devices for Ambient Air Location
    Observation: The temperature measuring device in the following mechanically refrigerated unit was not properly located in the warmest part of the unit: Duke 2dr prep cooler
    Correction: In a mechanically refrigerated unit the sensor of a temperature measuring device shall be located to measure the air temperature of a simulated product temperature in the warmest part of the refrigerator. Store the thermometer near the door of the unit.
  • Handwashing Sink / Accessible at All Times
    Observation: The handwashing facility located in the food prep area is blocked, preventing access by employees for easy handwashing.
    Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
    Observation: Outside refuse container was uncovered.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.
  • Handwashing Signage at Handwashing Facilities Required (repeated violation)
    Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at men's bathroom handwashing sinks used by food employees.
