There were no previous open hazards to follow-up on. The following foods were on the serving line: green beans (176°F.) and pepperoni pizza (126°F.). Baked potatoes in warmer were 135°F. Kitchen is very clean and organized. Hair restraints worn and gloves used appropriately. No bare hand contact with ready-to-eat foods. Food thermometers and sanitizer test strips on hand and used. No critical hazards observed during this inspection
  • Refuse - Covering Receptacles
    Observation: Lids missing from Dumpster or outside refuse container. This was mentioned in the comments section of the August 26, 2014 inspection.
    Correction: Cover all waste containers when not in continuous use. Procure lids for the Dumpster.

There were no previous open hazards to follow-up on. EHS discussed with person in charge (PIC) the changes coming to the food regulations to include the need to have a person certified in food safety on staff and cut greens will be considered foods requiring time and temperature control for food safety. Facility cooks an annual Thanksgiving meal where children can invite family members to join them for lunch. Some turkeys were cooked yesterday that will be served tomorrow for this lunch. PIC showed EHS documentation she did which showed the turkeys were cooled down in ice baths to 70°F in one hour and then in the next 30 minutes were down to 50°F. Less than an hour later she was able to put all turkeys in the walk-in cooler as they were 41°F or below. The Hobart dishwasher is not working

There were no previous open hazards to follow up on. This inspection focused on employee health, hand washing, no bare hand contact with ready-to-eat foods and cold holding temperatures. Staff is aware of special dietary considerations for the students, i.e., food allergies. No one here is required to eat only gluten free foods. Staff is very knowledgeable regarding food safety standards and practices. Proper use of hair restraints and gloves observed. Kitchen is very clean and organized. Dumpster is missing its lids. Please have lids replaced. There are no open hazards for this facility. Thank you.

Hazard 2720 from the March 29, 2012 inspection was observed as a repeat hazard during this inspection. Please get a Dumpster that has lids on it. This inspection focused on hand washing, no bare hand contact with ready-to-eat foods, cold holding temperatures, and proper sanitization of equipment and utensils. No critical hazards observed during this inspection. Single open non-critical hazard to be corrected immediately. Kitchen is extremely clean and well maintained. Thank you.
