Facility uses TPHC by standard operating procedure for quiches, chicken salad, and cream cheese sandwich spread. Facility is open from 11:30 AM to 2 PM daily. EHS reviewed TPHC with CFM.
Please obtain and use test strips for chlorine sanitizing solutions.
Thank you for your efforts to ensure food safety.
  • Sanitizer Test Kit Required
    Observation: A chlorine test kit was not available in the facility.
    Correction: Obtain and use a chlorine test kit. EHS provided training in its use.
  • Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site)
    Observation: The concentration of the chlorine solution in the spray bottle and wiping cloth bucket was measured to greatly exceed 200 ppm. This concentration exceeds the approved limits for use with food-contact surfaces of equipment and utensils in a foodservice establishment.
    Correction: Maintain the concentration of chlorine solution at 50 to 200 ppm. Verify concentration using the appropriate test kit. EHS provided training. Solutions were diluted to safe concentrations. Dishware, cooking equipment, and utensils are sanitized in the high-temperature dishmachine, which was observed functioning satisfactorily.

Facility food handlers are primarily volunteers. Each volunteer is required to sign employee illness reporting agreement before beginning work. Managers actively promote proper handwashing, glove use, and sanitization to control food safety.
A splash guard is recommended to protect foods near the the three vat sink.
  • Permit to Operate Required, Must be Posted, Must be Valid
    Observation: The establishment has not posted the permit to operate in a conspicuous location.
    Correction: A valid permit shall be posted in every food establishment in a conspicuous place in the public view. Food establishment permits are issued for a calendar year and expire on December 31 regardless of the month of issue. PLEASE POST PERMIT IN PUBLIC VIEW.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the hood filters are need of cleaning.
    Correction: Clean hood filters.

Today’s inspection was to conduct a routine inspection. Thank you for accompanying me through the inspection as your participation allows me to clarify information and identify areas where your processes may need further attention or assessment.
Dish machine: Hobart LX-30H. Heat.
Plantation is open for lunch 11:30AM-2:00PM during the month of March only.
EHS provided additional training and written instructions on:
-How to set up 3-vat for manual dish washing.
