Observation: Conduit boxes and wire covers along walls noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Observation: The door gasket of the 2 door Hobart is damaged.
Correction: Repair or replace the Hobart door gasket in accordance with the manufacturer's specifications.

Observation: The nonfood contact surface of the ice machine had accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the sanitize basin. CFM was told SFSPac rep not to keep sanitizer in buckets in back prep area and instead to keep warm water to clean between tasks.
Correction: Provide sanitizer at proper concentration and immerse or expose food contact surfaces to sanitizing solution for adequate time.
