Refrigerator logs observed for facility, but not fully maintained. Update refrigeration logs accurately and determine if prepared foods walk in box is in need of servicing in order to maintain proper internal ambient temperature.
  • Critical: Time/Temperature Control for Safety Food, Cold Holding
    Observation: Raw broiler chicken at 46 F, grated cheese at 45 F, pepper turkey at 46 F, braised oxtail at 46 F in prepared foods walk in.
    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 5ºC to 57ºC (41ºF to 135ºF) too long. Up to a point, the rate of growth increases with an increase in temperature within this zone. Beyond the upper limit of the optimal temperature range for a particular organism, the rate of growth decreases. Operations requiring heating or cooling of food should be performed as rapidly as possible to avoid the possibility of bacterial growth.

    Observation: The Osterizer blender in the preapred foods prep room is(are) not designed and constructed to be durable.
    Correction: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. Equipment and utensils must be designed and constructed to be durable and capable of retaining their original characteristics so that such items can continue to fulfill their intended purpose for the duration of their life expectancy and to maintain their easy cleanability. If they can not maintain their original characteristics, they may become difficult to clean, allowing for the harborage of pathogenic microorganisms, insects, and rodents. Equipment and utensils must be designed and constructed so that parts do not break and end up in food as foreign objects or present injury hazards to consumers. A common example of presenting an injury hazard is the tendency for tines of poorly designed single service forks to break during use.
  • Equipment/Good Repair and Proper Adjustment
    Observation: The prepared foods walk in is not maintaining an ambient internal temperature of 41 F or less.
    The 1 part prep sink in the chicken window area is no longer sealed to adjoining wall.
    The 3 part sink in the ware washing room is no longer sealed to adjoining wall.

    Correction: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 [Materials for Construction and Repair] and 4-2 [Design and Construction]. Proper maintenance of equipment to manufacturer specifications helps ensure that it will continue to operate as designed. Failure to properly maintain equipment could lead to violations of the associated requirements of the Code that place the health of the consumer at risk. For example, refrigeration units in disrepair may no longer be capable of properly cooling or holding potentially hazardous (time/temperature control for safety) foods at safe temperatures.
  • Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils/Clean
    Observation: The prepared foods kitchen hood filters are in need of cleaning.
    The nonfood-contact surface of the interior doors and adjacent areas in prepared foods walk in were in need of cleaning.

    Correction: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. The objective of cleaning focuses on the need to remove soil from nonfood contact surfaces so that pathogenic microorganisms will not be allowed to accumulate and insects and rodents will not be attracted.
  • Plumbing System/Maintained in Good Repair
    Observation: The pre-wash spray hose and the garbage disposal in ware washing room are leaking onto floor.
    Correction: A plumbing system shall be maintained in good repair. Improper repair or maintenance may result in the creation of obnoxious odors or nuisances, and may also adversely affect the operation of warewashing equipment or other equipment which depends on sufficient volume and pressure to perform its intended functions.
  • Surface Characteristics/Indoor Areas
    Observation: The @floor, wall, ceiling surface@ in this temporary food establishment is not smooth, durable, easily cleanable, and/or nonabsorbent.
    Correction: In a temporary food establishment: (1) If graded to drain, a floor may be concrete, machine-laid asphalt, or dirt or gravel if it is covered with mats, removable platforms, duckboards, or other approved materials that are effectively treated to control dust and mud
  • Physical Facilities/Repairing
    Observation: The floor in the ware washing area is not sloped to drain. Water observed ponding under hand sink.
    The walls in the ware washing room were observed with build up of mold.

    Correction: Physical facilities shall be maintained in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. This requirement is intended to ensure that the physical facilities are properly maintained in order serve their intended purpose.

  • Critical: Reheating for Hot Holding (corrected on site)
    Observation: The Mac n cheese that is cooked, cooled, and reheated for hot holding was not reheated so all parts of the food reached a temperature of at least 74ºC (165ºF) for 15 seconds. Food was immediately reheated to 165 F.
    Correction: Potentially Hazardous Food (Time/Temperature Control For Safety Food) that is cooked, cooled and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 74ºC (165ºF) for 15 seconds. When food is held, cooled, and reheated in a food establishment, there is an increased risk from contamination caused by personnel, equipment, procedures, or other factors. If food is held at improper temperatures for enough time, pathogens have the opportunity to multiply to dangerous numbers. Proper reheating provides a major degree of assurance that pathogens will be eliminated. The potential for growth of pathogenic bacteria is greater in reheated cooked foods than in raw foods. This is because spoilage bacteria, which inhibit the growth of pathogens by competition on raw product, are killed during cooking. Subsequent recontamination will allow pathogens to grow without competition if temperature abuse occurs.

    Observation: Observed spaghetti hot holding at the improper temperature of 117 F in the Auto Sham. Observed a rotisserie chicken in the chicken box at 124 F. Food was discarded.

A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

4. Submit new food license application to our office to include new take-out window name.
5. Approved to operate once you get your new license and other County Agency Final Approvals.
