  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Pepperoni in preptop was cold holding at improper temperatures. The pepperoni had been filled over the fill line in the storage container. Person in charge put pepperoni back in cooler since the items had been out less than four hours to bring the food back down to proper temperature.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: Meatballs, swiss cheese and cheddar cheese cold holding at improper temperatures in prep top 2 for less than four hours.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Meatballs piled to high in prep top were relocated, swiss cheese and cheddar also relocated.

Sanitary controls in place quaternary ammonium sanitizer tested at 200 ppm in three compartment sink. Facility was found to be in substantial compliance with the Virginia food regulations during inspection.
  • Equipment - Cutting Surfaces (repeated violation)
    Observation: The cutting board(s) along prep unit #2 are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
