    Observation: Observed food on the line over 41 degrees. Left prep unit not holding temperatures properly.
    Correction: Turn unit down or have maintenance come and fix the unit so that it holds food at 41 degrees or less.

    Observation: Observed the cutting boards on the line are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Observed the floors on the line and in the walk-in were dirty.
    Correction: Clean the floors, be sure to get under and behind equipment and shelves.

    Correction: Make sure equipment is cleaned after each use. break down the machine completely and clean/sanitize it.

    Observation: Several metal pans have residue from date mark labels on them.
    Correction: Make sure dishes are being cleaned thoroughly and the date mark labels and residue is being removed completely.

    Observation: Observed dust accumulation on and around air vent above grill.
    Correction: Clean air vent to prevent accumulation of dust/dirt.

Good glove use and hand washing observed. Refrigeration units are working well. Monitor prep units in the areas next to the stove and make sure proper temperature is maintained below 41 degrees. Make sure test strips received are for the Quaternary sanitizer, not bleach.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quat in 3 compartment sink was <150 ppm.
    Correction: Empty sink out and refill with quat sanitizer at 150-400 ppm (Monitor Closely). Call maintenance and have them make sure the equipment is working properly and get test strips in order to observe the sanitation level.
  • Critical: Equipment - Food Contact Surfaces and Utensils (corrected on site)
    Observation: Metal bins on clean rack had residue from date mark labels and were stacked together.
    Correction: Go through and thoroughly clean metals bins and be sure that label residue is removed completely when washing the dishes. PIC is having someone go through them and have them recelaned properly.
  • Equipment - Non-Food Contact Surfaces and Utensils (repeated violation)
    Observation: Observed pink mold build up in chute of slef serve ice dispenser.
    Correction: Clean out routinely to avoid build up of pink mold.
