* Employees had clean aprons/uniforms and had hair restrained.
* Observed glove usage w/ R.T.E.= ready to eat foods.
* Operator had up- to-date food temperature log book.
* Observed 200 ppm QUATS in the 3rd.basin of the 3 vat sink.
* Operator had QUATS test-strips for checking sanitizing concentration.
* Good job on code-dating products in the cooling units.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Observed food temperatures in the temperature danger zone on the grill sandwich prep. unit.
    Correction: OPERATOR HAS ORDERED PARTS FOR THIS UNIT TO BE FIXED.
    Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: Observed some staining on the interior of the ice-machine lid.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Observed significant dust build-up on air-intake cover(s) and on coils of compressors on cooling units.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted.

    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Shelves, doors, gasket, and handle on 1 door Traulsen freezer
    Correction: Debris on outside dry storage floor.
