Discussed the following with PIC: placing handwashing sign (one given) in the men's restroom, correctly storing chemcials away from side of hand sink and food storage areas and rotating sanitizer buckets more frequently. Overall the facility is clean and well organized.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration in the washcloth buckets.
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.
  • Critical: Toxics - Storage of Toxic Containers* (corrected on site)
    Observation: Containers of chemical products are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
    Correction: Containers of chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items.

    Observation: Gasket front walk-in torn,peeeling paint on the hood,walk-in compressor has ice buildup were observed in a state of disrepair and damaged.
    Correction: Repair the gasket, hood, compressor to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the gasket, hood, compressor, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment and Utensils - Good Repair and Calibration
    Observation: The thermometer on theplastic handled utensils is not in good repair and/ or not accurate in the range of use.
    Correction: Repair, replace, and/or maintain the calibration of gauges for accuracy and function in the intended range of use.

    Observation: The nonfood contact surface of the racks front walk-in has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Drainage pipe connections under the 3 compartment sink is leaking, hose for auto sanitizer for 3 compartment sink is leaking, front handsink faucet broke..
    Correction: Plumbing systems and components shall be maintained in good repair.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Back drive thru window self closure broken, front drive thru window not self closing.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the plastic food containers preventing its use.

    Observation: Light bulb in chemical storage area is not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

    Observation: No disposable towels were provided at the hand washing lavatory at the front handsink.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
