Discussed with PIC the need to rotate food on the buffet line and to not overload the dishes on the buffet line to help hold temperature. Discussed the temperature of the vegetable walk in refrigerator and ensuring it keeps at or below 41 degrees.

Lighting measured in foot candles: cook line 65, food prep 60, Walk in refrigerators 10 & 20, walk in freezer 30, dry storage area 64 , dishwashing station 90, sushi bar 70, wait station #1&2 50, 30, mop sink area 66, rest rooms 10, hibachi food prep area 50. Standing water observed at the clean end of conveyer dishwasher. Recommend that this end has adjustments which allow for proper drainage of water. Install drop ceiling in dry storage room. Provided owner with employee health form 1-B and CFM re-certification class schedule. Health permit issued.
No violation noted during this evaluation.
