Please continue to focus on detail cleaning of the kitchen area. Note: Prep Unit (Drive-Thru) is schedule to be serviced. Need to continue to monitor product temperatures and take the proper corrective action to ensure safety of product being held on the unit.
Critical: Backflow Prevention, Air Gap* Observation: An air gap between the water supply outlet and the flood rim level mop sink is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Physical Facilities - Cleaning Frequency and Restrictions Observation: Floors, walls and ceilings throughout the food establishment noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Discussed food prep should be completed in the food prep sink. Discussed need for wash, rinse, and sanitize needed of all food prep surfaces at least once every four hours. Monitor foods in the prep near the counter to ensure that potentially hazardous foods are maintained at 41 degrees Fahrenheit or less. Ensure foods are properly cooled prior to placing foods in prep units. No violation noted during this evaluation.
