Please continue to focus on detail cleaning of the kitchen area. Note: Prep Unit (Drive-Thru) is schedule to be serviced. Need to continue to monitor product temperatures and take the proper corrective action to ensure safety of product being held on the unit.
  • Critical: Backflow Prevention, Air Gap*
    Observation: An air gap between the water supply outlet and the flood rim level mop sink is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.
  • Physical Facilities in Good Repair
    Observation: Ceiling tile and coving is not maintained in good repair

Discussed need for wash, rinse, and sanitize needed of all food prep surfaces at least once every four hours.
Monitor foods in the prep near the counter to ensure that potentially hazardous foods are maintained at 41 degrees Fahrenheit or less.
Ensure foods are properly cooled prior to placing foods in prep units.
