NOTE: Handwashing sink Hot water knob handle currently non-functioning and highest handsink temperature reached at 88F. CFM had called for repair prior to inspection to be completed today. ACTIVE MANAGERIAL CONTROL: Observed very good examples of Active Managerial Control by CFM today. CFM is very knowledgeable about Food Safety as and able to demonstrate and discuss proper food handling procedures and temperatures. CFM conducts daily Refrigeration and Food Temperature checks every morning and throughout the day which are logged onto Log Book. Observed all refrigeration and food temperatures in Compliance. Sanitizer buckets are changed every 2 hours. Food employees are to wash hands at handwashing sink every 2 hours or when change in tasks. EHS Observed exceptional handwashing by multiple food employees throughout duration of inspection. During inspection, CFM was observed practicing very good managerial examples through Training and through daily observation of food employees. Facility observed clean and organized. No Risk Factor Violations or Good Retail Practice Violations have been noted today. Please attain Certified Food Manager's Card and send copy to Health Department by 3/8/15. NOTE: 2DR UCR by cookline (front) is currently not operating. Unit will not be used for cold food holding. Observed very good examples of Active Managerial Control with handwashing procedures, temperature monitoring, and datemarking. Thank you.
