CFM card unavailable during inspection and Certificate viewed. Please send a copy of your current Certified Food Manager's Card to the Health Department by 3/17/16. Thank you. NOTE: Observed several floor tiles rusted and/or cracked or missing in facility. CFM has called for Work Order prior to inspection. Observed excellent Active Managerial Control practices today by CFM and at facility including a daily Checklist and Log on the following items: Refrigeration Unit Temperature checks and log, Food Holding Temperature and Log, Cooking/Reheating Temperature and Log, Sanitizing Schedule log, Employee Health Policy checklist, Pest Control checklist, and Food Handling Checklist. CFM also creates Goal lists on Board viewable for all employees which include Food Safety items as well. Based on discussion with CFM, EHS observed CFM to be very knowledgeable about Food Safety practices and procedures. No critical violations have been found during today's inspection. Active Managerial Control Award Presented today based on the above. Thank you and Keep up the great work!

The purpose of this visit is to conduct a complaint inspection. The manager was not aware of the complaint. He has a certified food manager card and was able to demonstrate knowledge regarding the employee health policies. Staff present washed hands prior to putting gloves on to assemble the pizza. Although the employee is aware he does not have to wear gloves when he is assembling the pizzas it is a personal preference to wear them. The manager stated that there have not been any sick employees. The food provided is from an approved food source, received frozen then placed in the refrigeration unit to thaw. A date is placed on the box to indicate the start date for the thawing process and the discard date. The chicken wings are precooked when they are received and held in a refrigeration unit that is maintaining an ambient temperature of 41F or below at the time of the inspection. The process of reheat is on a per order basis and they do not hot hold any food. This complaint is not confirmed. No violation noted during this evaluation. | 03/25/2014 | Complaint | |
