Received complaint that customer became sick after eating chicken pecan salad from this restaurant. (see Complaint on file) I discussed complaint with manager. She said there have been no other complaints and no reports of employee illness. No problems noted with chemical storage or unit/food temperatures. Salad ingredients are either pre-washed or washed at restaurant.Chicken is grilled from frozen raw state. Manager said that it is cooked at 290 to 310 degrees grill with cook time of 5 or 6 minutes on each side. It is held at 150 degrees minimum for 1 hour maximum and then discarded. There are no records of cooking temperatures to ensure that it reached 165 degrees F for 15 seconds. I recommended checking cooking temperatures of chicken on a regular basis. All holding temperatures in the log for that product were less than 165 degrees F. Nothing definitive indicated that food caused illness.
No violation noted during this evaluation.
