    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands. Lettuce washed with bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Items in walkin cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Handwashing Lavatory, Water Temperature, and Flow (corrected on site)
    Observation: Water from the handwashing sink at kitchen was measured at a temperature less than 100°F.Running hot water has been turned off.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

Chili- 1/2 bucket w/ ice paddle (thawed) in walkin cooler. Reviewed company procedures on page 18 with PIC. Appears procedure was followed. Recommend starting cooling process earlier and on ice bath before adding paddle and moving to walkin cooler. (Note: cooling starts 2am - observed 11:30 am=9.5 hours)
  • Critical: Cooling* (corrected on site)
    Observation: Chili noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. MANAGER DISCARDED ITEM
