Advised to have foods cool then cover to reduce condensation build-up in storage. Cold-Tech not keeping food at lower levels at 41 degrees F or below. Can-opener knife needs cleaned. Food-dating in good use but cooked foods needed to be discarded or used for personal use after 7 days. Shelves need added to Commander freezer up-front for proper freezing. Broken lid to cheese container needs replaced. Hair restraints required by food-prep staff. Dishwasher water temp needs to be brought up to 120 degrees F, currently at 100. Light cover required over light at waitress station. Covered trash container needs removed from men's rest-room to women's. Lights in hood over grill fixed during inspection. Reccomend pasturized eggs be used for Baked Ziti or all parts of product must reach 155 degrees F. Advised to create training program for food-staff about Food-Safety. Walk-ins need to be cleaned and floors repaired/repainted where needed. Women's restroom needs covered receptacles (also in shared restroom). Make sure that cooling units can keep food at 41°F or cooler. If not segregate to separate area if still needed for use. Clean walls and repair holes in wall (parge or cover up). Air breaks needed at prep sink, so that back-ups do not occur where food is going to be prepared or thawed in sinks. All food storage should be at least 6" off of the floor, adjust shelving as needed. No food storage on the floor. Light hanging down needs to be repaired and papertowel dispensers.
