  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Vent filter missing and a build up observed in the hood system.
    Correction: Maintain hood system in a clean condition and replace the missing filter.

- Some build-up of debris around the lights under the hood.
- repair/replace broken floor tile in the kitchen
- make sure test strips are provided for the lower bar 3 vat sink. Staff could not locate during inspection
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
  • Critical: Reheating for Hot Holding* (corrected on site)
    Observation: The tomato soup was not reheated to 165F within 2 hours to eliminate pathogenic bacteria.
    Correction: Rapidly reheat food for hot holding to 165°F or above within 2 hours.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Bleu cheese crumbles and other food items that were double panned in the prep table were cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Mechanically vented hood filters not in good repair.
    Correction: Repair or replace hood filters and/or eliminate gaps between filters.
  • Hand Drying Provision
    Observation: No disposable towels were provided at the hand washing lavatory in the lower bar area.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

- All items listed from the first pre-opening inspection have been addressed. The facility is approved to open, the permit was issued.
- Address the one small wall opening behind the dish machine.

- add ceiling in the back room behind the bar down stairs (over keg cooler and ice machine) (ceiling materials must be smooth and easily cleanable, i.e. vinyl coated ceiling tiles)
- add "employee must wash hands for returning to work" in the restrooms
- paint all wood surfaces so that it is smooth and easily cleanable (kitchen and bar area)
- address wall opening behind the dish machine and the opening electric box on the ceiling by the suppression system
