Note: Kitchen functions as staging area of banquets and meetings. All foods are prepared at the main kitchen and held hot/cold in this kitchen. They use this kitchen only when they have plates ready. Dish machine and 2 upright refrigerators not in use and turned off.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.

The purpose of today's visit was to conduct a routine inspection.
This kitchen is an auxiliary serving kitchen for the hotel, main kitchen is permitted under Old Ox Grille. No cooking is done within this kitchen, only dishmachine is used on occasion, mostly for dishware, when functions are being held in any of the ballrooms. All foods are prepared in the main kitchen and kept at temperature at ovens or refrigerators within this kitchen. Other refrigerator observed today were empty. Food is not stored in kitchen after events, CFM will have staff discard or move food (half and half) located in refrigerator and clean the racks of glasses observed. Kitchen is located behind the Bellmont Ballroom.
In the future, David Chlebana (Director Food & Beverages) asked if it was necessary to have the kitchens permitted separately, as this kitchen is not used for cooking and is only used for events that require it.

Dishmachine: was turned off, not in use today.

This is a risk factor inspection of this auxilary kitchen designed to receive food from the main kitchen for service for functions in the ball room. There is no cooking equipment in this kitchen. Due to its nature it was not in use at the time of inspection but operation of the refrigeration unit WAS CHECKED
  • Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC (corrected on site)
    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
