The purpose of this visit was to conduct a complaint investigation in conjunction with a risk factor assessment inspection. Complainant allegedly bought coleslaw from facility and stated it was spoiled. PIC was not aware of the complaint and no other complaints were known to the facility. There has been no recalls or damaged product and equipment. PIC went over the coleslaw process from delivery to the customer. Coleslaw comes precut and prepared in bags with the dressing in a separate bag. Facility washes the coleslaw, lets it air dry and then mixes in the dressing (contains egg). After mixing the product, the coleslaw is portioned out into cups and then stored in the walkin cooler and the Beverage Air 1dr cooler by the drive-thru. Maximum time to keep coleslaw is 2 days. EHS did not observe any damaged product and equipment was in working condition. EHS recommended to leave hot foods, cooling down in Walkin Cooler uncovered and containers unstacked in order to allow rapid cooling.
